At Mouse’s Favourite we turn the apricots into a house-made chutney, combining them with organic apple cider vinegar and a small amount of unrefined brown sugar to create a deliciously sticky, tangy, but gently sweet pickle. This mouth-watering concoction is sure to become a new favourite for anyone who loves the classic combination of cheese and pickle. We use unsulphured apricots which are naturally darker in colour than the more commonly seen bright orange ones, but they give a more natural flavour and, more importantly, keep your vegan cheese clear of any preservatives.
